Spaghetti squash, Italian style - Food - The Olympian - Olympia ...

A couple of weeks ago, my son Leo broke his arm on the basketball court. We stayed close to home for a few days, so we needed the sort of food that would warm us inside. This recipe did the trick. Because spaghetti squash keeps for about two months, I didn?t have to go farther than my pantry for my vegetables.

The Italian word ?zucca? is used to describe gourds and squash, as well as pumpkins. ?Fiori di zucca? is what we call zucchini flowers. Spaghetti squash is referred to as ?spaghetti di zucca,? or vegetable spaghetti.

Though spaghetti squash is available on the Italian peninsula, it isn?t a traditional Italian ingredient, per se.

When I started cooking in New York almost two decades ago, I was doing a new kind of Italian. It was reported as a ?deluxe? version of the cooking found in the Italian countryside. To me, it was a logical next step. I used the techniques and preparations I had learned during my time in Italy and adapted them in new ways for American ingredients.

There?s no traditional Italian preparation of spaghetti squash, but you can, no doubt, approach it with an Italian-ness. You can bake it with olive oil, salt and pepper and add Italian parsley or sage for additional flavor, as I do in this preparation. Alternatively, you can eat it just as you would spaghetti, with tomato sauce, for a vegetarian, gluten-free pasta.

At this time of year, you have to scour the grocery aisles to find what?s freshest. Like acorn squash, spaghetti squash is available year-round, but in February and March, the bleakest times in a New York market, you have to take advantage. During the winter, this is a tasty seasonal option that works just as well as a main course as it does as a side dish. Spaghetti squash is a daunting vegetable, but this recipe makes it remarkably easy. It?s great as a side dish or a main course, to be paired with a meat or a pasta. And because it?s gluten-free, it?s a nice addition to a party spread.

Spaghetti Squash with Soft Herbs and Robiola

Serves 8 to 10 as a side dish.

2 small spaghetti squash (about 2-1/4 pounds each)

4 tablespoons (1/2 stick) unsalted butter

6 ounces fresh soft Robiola, cut into 1/2-inch cubes (you may substitute cream cheese)

2 tablespoons finely chopped fresh basil

2 tablespoons finely chopped fresh chives

2 tablespoons finely chopped scallions (white and about 2 inches of the greens)

2 tablespoons finely chopped fresh parsley

2 tablespoons finely chopped fresh sage

Salt and freshly ground black pepper, to taste

Preheat the oven to 375 degrees F.

Using a sharp knife, cut each squash in half lengthwise. Place them, cut-side down, in a large baking dish. Add enough water to reach 1/2 inch up the sides of the dish, and cover with aluminum foil. Bake for 45 minutes, or until the squash is easily pierced with a paring knife.

Turn the squash over, cover with foil again, and bake for another 15 minutes, until the squash is very tender. Remove from the oven, uncover, and allow to cool slightly. Using a spoon, remove and discard the seeds. Using a fork, gently pull the strands of squash away from the peel, and place the squash strands in a mixing bowl.

In a 14-inch skillet, heat the butter over medium-high heat until it is foaming. Then add the Robiola and stir to melt. Add the spaghetti squash, herbs, and salt and pepper, and toss thoroughly but gently to heat and combine. Serve immediately or at room temperature.

ARLINGTON, Va. Engineers have fired the Navy's first industry-built electromagnetic railgun (EM Railgun) prototype launcher at a test facility, commencing an evaluation that is an important intermediate step toward a future tactical weapon for ships, officials announced Feb. 28.

The firing at Naval Surface Warfare Center Dahlgren Division (NSWCDD) kicks off a two- month-long test series by the Office of Naval Research (ONR) to evaluate the first of two industry-built launchers. The tests will bring the Navy closer to a new naval gun system capable of extended ranges against surface, air and ground targets.

"We are starting our full-energy tests to evaluate the barrel life and structural integrity of the prototype system," said Roger Ellis, program manager of the EM Railgun, part of ONR's Naval Air Warfare and Weapons Department. "It's the next step toward a future tactical system."

The EM Railgun launcher is a long-range weapon that fires projectiles using electricity instead of chemical propellants. Magnetic fields created by high electrical currents accelerate a sliding metal conductor, or armature, between two rails to launch projectiles at 4,500 mph to 5,600 mph.

The 32-megajoule prototype demonstrator, built by BAE Systems, arrived at NSWCDD on Jan. 30. One megajoule of energy is equivalent to a 1-ton car being thrust at 100 mph. The prototypewhich now looks more like a naval weapon compared to previous lab-style launchersis the first of two industry-built launchers to be delivered to the Navy. General Atomics is building the second launcher, scheduled for delivery in April. ONR previously relied upon laboratory-built systems to advance the technology.

After installing the BAE Systems launcher and outfitting it with a comprehensive suite of sensors, high-speed cameras and measuring devices, engineers fired successful low-energy test shots to prepare it for the evaluation. The team will conduct tests at 20 megajoules and 32 megajoules, shooting test projectiles similar to what was previously fired through NSWCDD's laboratory launcher.

"The test series will characterize the gun's performance by shooting several rounds through the barrel at various energy levels to fully exercise the capabilities of the prototype," said Ellis.

When fully developed, the EM Railgun will give Sailors a dramatically increased multimission capability. Its increased velocity and extended range over traditional shipboard weapons will allow them to conduct precise, long-range naval surface fire support for land strikes; ship self-defense against cruise and ballistic missiles; and surface warfare to deter enemy vessels. The Navy's near-term goal is a 20- to 32-megajoule weapon that shoots a distance of 50 to 100 nautical miles.

To achieve this, the Navy is moving ahead with the EM Railgun program's next phase: to develop thermal management systems for both the launcher and pulsed power to facilitate increased firing rates of up to 10 rounds per minute. Toward this end, BAE and General Atomics have been contracted to begin concept design of a next-generation thermally managed launcher.

"The next phase of the development effort is to demonstrate the ability to operate at a firing rate of significant military utility," Ellis said.

Additionally, ONR awarded contracts through Naval Sea Systems Command to General Atomics, BAE Systems and Raytheon Co. to develop a pulsed power system capable of meeting the firing rate goal.

Various new and existing ship platforms are currently being analyzed for future integration.

Advice on Conducting International Business in the European Union ...

An Overview of the European Union

A company can spend a lot of time and resources training its? sales managers and salespeople and may have the finest sales team as far as domestic sales are concerned. ?However, selling in the USA is very different from selling in other countries and sales practices that are successful here can be disastrous if applied in other countries. Each region and each country within a particular geographic region present unique business cultures and etiquettes. One such region is the European Union.

There are 27 Member Countries currently with 4 candidate countries and 5 other potential candidates. In the 27 member countries, there are 24 languages spoken and business practices and etiquette are as numerous and diverse as these numbers would suggest.

The EU is less than half the size of the USA ? 1.67m sq mls versus 3.79m Sq mls ? but has over 1.5 times the population at 501m versus 308m according to the 2010 Censuses.

Selecting the Prime EU Markets for your Product(s)

As with any business decision, it depends on your product as to which Countries are the prime ones. For some products, the prime markets are not necessarily the largest or most populated. In 2010, the #1 and #2 European importers of Pharmaceutical Preparation Products from the USA were Germany and The Netherlands.

Germany is the size of Montana but its? population of 82.3 million, is the same as the top 3 populated US States, California, Texas and New York, combined ? April 2010 Census. The Netherlands (pop 16.6 million) is about half the size of South Carolina and nearly as populous as Florida, which is the 4th most populated US State.

Obviously, companies entering the EU markets for the first time are not Pharmaceutical giants but the comparison I used can apply to other product families. `

How do you determine where to start?

Here are some guidelines to consider:

  • Short list Countries you believe are the best potential markets and for which you don?t need localization, thereby reducing initial costs.
  • Use US and local search engines to determine which of your competitors are established in the short-listed Countries.
  • If you have European clients buying directly from you, ask them why they bought your product and if they would endorse it as part of your launch program in their Country. User endorsements can be a priceless marketing tool.
  • If you don?t have anyone in your company with international experience, contract an International Business Consultant to help you with your sales & marketing efforts.
  • Source and appoint Channel Partners and learn from them what works in their Country.

Start your European business adventure understanding what works for you in the USA, more than likely will not work abroad. Each Country has its? own business culture and etiquette and offers its? own unique challenge.

As you develop your business plans and marketing strategies, be sure to note what works in individual Countries so you can develop a sound Global strategy, knowing what can be incorporated as part of your overall strategy and what is unique to each Country.

The top 10 European Countries by Imports, based on data from the World Trade Organization and the International Trade Administration of the US Department of Commerce, are:

Choose your Channel Partners well and acknowledge they will know what works in their Country. Encourage them to develop marketing plans and, if they advise that your product or marketing materials need localization, ask them if they would like to do it. In my experience, it makes them more invested in making sure you achieve success in their Country.

Establishing Your Channel Network in the European Union

By the time you are ready to implement your expansion into Europe, you will have determined those Countries in which your competitors are established, know which Countries will require localization of part or all of your product and have sourced and appointed the Channel Partners you believe will bring you success in their respective Countries/Regions.

Before you launch your product in the chosen Countries/Regions, please make sure you have given your Channel Partners sales and technical support training and satisfy yourself that they are ready to start their marketing campaigns and can at least provide first level support.

Initially, you will probably have to provide more detailed support and ongoing training to the Partners until they have reached a level where they are able to be virtually self sufficient. If you have chosen well, they will be an integral part of your sales and support teams and require the same level of management, ongoing training and guidance as your domestic sales and support teams.

Once you have given them an agreed period of time to develop their respective sales and marketing campaigns, you will set them monthly and/or quarterly sales targets. In line with this, they will provide you with sales reports and forecasts.

Many International Channel Partner agreements will include a base discount structure with incentives built in that reward performance with increased discounts. If having your products advertised in local media is important, you can also negotiate marketing incentives.

So it has been several months since Grandma Luethje passed and I brought home a few pieces of furniture and boxes of momentos, but I haven?t really had a chance to sift through or unpack any of it until now. The rental house was just too cramped to unpack much of anything, and I?m just now uncovering the boxes in the basement.

I gotta say, unpacking tonight was a bit like Christmas. I?d forgotten about a few of Grandma?s things that I saved, so it was a bit of a surprise opening the box to see what was inside. And it?s always a big score when there are books involved?

I remember seeing these old cookbooks in one of the boxes in Grandma?s garage for the estate sale and I couldn?t let them go. If there is anything I?m more addicted to than books, it?s old books. I love the look of them. I love the smell of them. I love imagining how many different hands have held them over the years.

As I began flipping through them, I made a couple of interesting discoveries, such as?

1. At least two of these books belonged to my great-great grandmother Lulu, and she had a really cool stove.

2. Old turn of the century cookbooks have way cooler sections and illustrations than anything you?ll find on the shelves these days. For instance?

Invalid Cookery?with everything from recipes for infants to adults with chronic heartburn.

And whether you?re butchering a pig?s head or the loch ness monster, these books have you covered with detailed instructions and diagrams.

Even more fun than the books themselves were the little treasures I found tucked away in the pages. Here?s a coupon for 10 cents off Butternut Coffee. Too bad it expired in 1928.

I also found this copy of my Grandma and Grandpa Luethje?s wedding announcement hiding away in the Gold Medal Flour Cookbook

And the best yet was little little folded piece of paper that fell out of Grandma Roden?s old American Cookbook?

I?m pretty sure the handwriting is my Grandma Luethje?s, written back when her hands were still steady and precise. I opened it carefully, wondering what was so special about an old page torn from a magazine?

Family holidays can be great, so long as everyone gets along. But as with all the people you are closest with, your family knows how to push your buttons, knowing exactly what to say to make your blood boil. There?s nothing worse than a good holiday ruined by continuous arguing, moaning, or any other kind of drama. What follows is some advice for making sure that your holiday is a memorable one, but for all the right reasons.

The first thing you need to do is plan. Nothing fuels ill content than boredom, so make sure you have a decent plan as to what you want to do each day, and make sure everyone is happy with it. Then again, the plan should also be flexible, for one sure way of manufacturing resentment is to be too authoritarian, and unreasonably refuse ideas because they don?t fit in with the plan.

If you are travelling with children, then one way to make them more content is to make sure you give them their freedom. If they really want to go and do something on their own, then let them, and if they really don?t want to do something with you, let them stay behind. Even if they end up really regretting it, they will have no one to blame but themselves.

If you have small children which need watching all the time, however, then make sure that you share the load with the rest of your family. To make sure that everyone gets at least some down time, free of responsibility, get the older siblings, or friends to look after the kids for you.

The rest is the fun bit. Once you?ve made sure that arguments are unlikely, then you should just concentrate on having fun. There are so many great places to visit, with resorts containing so much to do for all the family, even if, like most families, you have very varied desires.

Nova Scotia's Labor Department has laid charges following an 18 month investigation into the death of a 12-year-old boy who was run over by a truck in Cape Breton.

According to information from the NSLD, Dylan LeBlanc of Cheticamp was killed while riding his bicycle near a local inn that was being renovated in August 2010. The boy was hit and run over by a boom truck. (WCxKit)

Researchers at the University of Copenhagen have designed, produced and patented a new chemical compound for the possible treatment of brain damage caused by stroke. The compound binds 1,000 times more effectively to the target protein in the brain than the potential drug currently being tested on stroke victims. The results of biological tests have just been published in the renowned journal PNAS.

More than 140,000 people die each year from stroke in the United States. Stroke causes the brain to release large amounts of glutamate, an activating signal compound, all at once. This overactivates the receptors in the surrounding healthy tissue, causing the level of calcium in the cells to rise dramatically. This then kick-starts a toxic chain reaction causing cell death. Scientists believe that this process is the cause of the brain damage that occurs in the wake of a stroke. Therefore they are looking for compounds that can limit cell death:

"Research on animal models shows that the new compound we have designed and produced reduces the dead area in the brain after a stroke by 40 per cent. In addition, we can show that our compound is far more biologically effective than the potential drug currently being tested in clinical trials," explains Anders Bach, medicinal chemist and postdoc at the Faculty of Health and Medical Sciences.

Improving motor function in animals

A research project based at the Faculty of Health and Medical Sciences is the catalyst for the development of drugs to treat brain damage resulting from stroke. A new chemical compound has shown to be extremely potent, binding 1,000 times better than the potential drug currently under clinical development. Biological tests also indicate that the new compound shows high biological activity in animal models and is able to pass through the nearly impermeable blood-brain barrier, which is otherwise a fundamental challenge in clinical drug development. The results have just been published in the scientific journal PNAS Proceedings of the National Academy of Sciences of the United States of America.

"Our compound is able to pass through the blood-brain barrier, but also interesting is that it improves motor function in the animals that have been subject to stroke, for example, seen as increased grip strength in the paws of the mice," relates Anders Bach.

Alternative angle to drug development

Previously the development of drugs to combat brain damage resulting from stroke focused on blocking the receptors for signal compounds in the brain, such as glutamate. While this protected the receptor against the danger of overactivation, it unfortunately also influenced the normal vital functions of the receptor, causing unacceptable side effects.

Therefore in recent years there has been increased interest in an alternative strategy where the drug does not influence the receptor directly, but instead acts on the interactions between the receptor and the proteins in the cell. This is an important area of focus for the Chemical Biology research team at the University of Copenhagen:

"Our research is concentrated on disrupting the interaction between the so-called NMDA receptor and the intracellular protein PSD-95. Other scientists have shown interest in the same area one group has developed a particularly interesting compound that is currently undergoing clinical development. However, we have reconsidered the design of the compounds in this area and come up with a new one that is more effective," states Anders Bach.

Detailed understanding of the molecular mechanism

In order to find compounds that can detach the PSD-95 protein from the NMDA receptor, one must have a method for measuring the extent to which the compounds bind to PSD-95.

"We have established a method fluorescence polarisation that has been very successful in helping us develop a number of potent compounds over a long period of time," recounts Anders Bach. He adds that scientists have committed many resources to finding out exactly how the compounds bind to PSD-95 using for example sophisticated biophysical methods. This has resulted in detailed understanding of the molecular mechanisms that cause the high level of activity.

Anders Bach hopes that the new compound can form the basis for a new drug on the global market, but he emphasises that such a process is long and complicated:

"Although we are very satisfied with the new results in terms of the possible treatment of brain damage due to stroke, many things can go wrong in the long drug development process. So even though the compound binds effectively in laboratory studies and shows promising biological activity in animal models, we will still have many challenges to overcome," concludes Anders Bach.

The PSD-95 protein is also involved in chronic pain as well as Alzheimer 's disease so the new compound may also prove interesting to examine in connection with other conditions.

Their work showed that 35% of women received chemotherapy and 20% received hormone therapy that did not conform to established guidelines. More than four in five of the women lived in low-poverty areas and 51% were treated at non-Commission on Cancer hospitals.

Commission on Cancer hospitals are required to follow guidelines established by the National Cancer Institute and about 70% of hospitals in the US are Commission members. But if a patient goes to a non-Commission hospital, they can't expect that their treatment will conform to the best known standards.

      (AP) ? John Glenn joined the proud, surviving veterans of NASA's Project Mercury on Saturday in celebrating the 50th anniversary of his historic orbital flight.

      The first American to orbit the Earth thanked the approximately 125 retired Mercury workers, now in their 70s and 80s, who gathered with their spouses at Kennedy Space Center to swap stories, pose for pictures and take a bow.

      "There are a lot more bald heads and gray heads in that group than others, but those are the people who did lay the foundation," the 90-year-old Glenn said at an evening ceremony attended by NASA officials, politicians, astronauts and hundreds of others.

      "We may be up on the point of that thing and get a lot of the attention, and we had ticker-tape parades and all that sort of thing. But the people who made it work ... you're the ones who deserve the accolade. So give yourselves a great big ovation," Glenn said, leading the crowd in applause.

      Glenn and fellow astronaut Scott Carpenter, 86, spent nearly an hour before the ceremony being photographed with the retirees, posing for individual pictures in front of a black curtain with a model of a Mercury-Atlas rocket. Glenn and Carpenter are the lone survivors of NASA's original Mercury 7 astronauts.

      Earlier in the day, the Mercury brigade traveled by bus to Launch Complex 14. That's the pad from which Glenn rocketed away on Feb. 20, 1962.

      Some retirees were in wheelchairs, while others used walkers or canes. Most walked, some more surely than others. But they all beamed with pride as they took pictures of the abandoned pad and of each other, and went into the blockhouse to see the old Mercury photos on display and to reminisce.

      As retired engineer Norm Beckel Jr. rode to the pad Saturday, he recalled being seated in the blockhouse right beside Carpenter as the astronaut called out to Glenn right before liftoff, "Godspeed John Glenn."

      But there's more to the story.

      "Before he said that, he said, 'Remember, John, this was built by the low bidder,'" Beckel, 81, told The Associated Press.

      The Mercury-Atlas rocket shook the domed bunker-like structure, although no one inside could hear the roar because of the thick walls.

      "Nothing was said by anybody until they said, 'He's in orbit,' and then the place erupted," Beckel recalled.

      Beckel and Jerry Roberts, 78, a retired engineer who also was in the blockhouse that historic morning, said almost all the workers back then were in their 20s and fresh out of college. The managers were in their 30s. "I don't know if I'd trust a 20-year-old today," Beckel said.

      "They don't know it, but we would have worked for nothing," said Roberts, who spends the winter in Florida.

      Bob Schepp, 77, who like Beckel traveled from St. Louis, Mo., for the reunion, was reminded by the old launch equipment of how rudimentary everything was back then.

      "I wonder how we ever managed to launch anything in space with that kind of stuff," Schepp said. "Everything is so digital now. But we were pioneers, and we made it all work."

      The Mercury team included women, about 20 of whom gathered for the anniversary festivities. One pulled aside an AP reporter to make sure she knew women were part of the team.

      "Most of the women here are wives," said Lucy Simon Rakov, 74. But not her.

      "We weren't secretaries. We were mathematicians," said Rakov, a pioneering computer programmer who traveled from Boston for the reunion.

      Patricia Palombo, 74, also a computer programmer, said working on Project Mercury proved to be the most significant thing she's done in her career.

      Glenn's flight was the turning point that put America on a winning path that ultimately led to the moon.

      "It's been downhill from here," Palombo said with a laugh. She lives near Washington, D.C.

      Roberts praised the wives who endured the hardships back then. He recalled how he and his colleagues worked 16- and 18-hour days, seven days a week, especially after the Soviet Union grabbed the prize of first spaceman with Yuri Gagarin in 1961. Gagarin reached orbit on his mission; another Soviet cosmonaut also rocketed into orbit before Glenn's voyage.

      Many marriages ended in divorce because of the excessive workload, Roberts noted. Turning to his wife, Sandra, he said proudly, "This gal's been with me for 57 years."

      "Not that many," she told him. "We're going to be 55."

      "Fifty-five. That's right, that's right," Roberts muttered.

      "Golly, gosh, when you get old, you forget about numbers," Schepp piped up.

      NASA's celebration of Glenn's three-orbit, five-hour flight aboard the Friendship 7 capsule began Friday at Cape Canaveral. The festivities move to Columbus, Ohio, on Monday, the actual anniversary. Glenn will be honored at a gala at Ohio State University; its school of public affairs bears his name.

      His wife of 68 years, Annie, who turned 92 Friday, and their two children are accompanying him to all the festivities.

      Glenn served in the U.S. Senate for 24 years, representing his home state of Ohio. He ran for president in 1984. He returned to space in 1998 aboard shuttle Discovery, becoming the oldest spaceman ever at age 77.

      Carpenter told the crowd Saturday that he's still waiting for his first shuttle ride, drawing a big laugh.

      The Mercury 7 astronauts were immortalized in Tom Wolfe's 1979 book about the space program, "The Right Stuff," which was later made into a movie.

      Although Wolfe suggested the nation will never see another hero of Glenn's stature, Carpenter noted, "Maybe one day before too long the great hero John Glenn himself may be replaced by another national hero who represents the command of a Mars crew returned safely."

      "John, thank you for your heroic effort and all of you for your heroic effort," Carpenter told the Mercury old-timers. "But we stand here waiting to be outdone."
